Soft CHOCOLATE CHIP COOKIES

Ingredients:

3 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt

1 cup butter (2 Sticks)
1 cup brown sugar
1 cup sugar
2 eggs
2 tsp. vanilla

12 oz.chocolate chips (1 bag)
1 cup walnuts or pecans (or not)

Steps:

Mix the dry ingrediants together and set aside. Do this! A wire whip does a great job of mixing the dry stuff. There's science at work in mixing the baking soda, powder and salt throughout the flour mixture.
Cream the butter and both sugars. Work the mixure off the side of the bowl with a spatula.
Add eggs and vanilla and mix it well. More spatula work.
Add the dry ingredients and mix as much all at once as you can and mix it on slow and do not overmix.
Add chocolate chips and nuts and mix it very little
Form into balls, and place on a cookie sheet.
Bake for 8-10 minutes at 375 degrees until they just start to brown. Use the look not the timer since cookie size matters to cooking time.
Cool and eat. Be careful not to overbake!
